Mix flour, ricotta, egg. Knead into a ball.
Gently massage them in a rolling motion until they stretch into one long piece.
Cut them with a knife, then roll them with an index finger so that they curl up.
I’m miserable with recording recipes for my blog. So I just Googled it and found a generic recipe here.

wow, looks delicious! I love Italian ricotta gnocchi, so I’m hoping the French version of ricotta cavatelli will be similar.
